Cacao Coffee Cake

Wet Ingredients:
- 2 eggs
- 1 tsp vanilla
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1/2 cup maple syrup (optional)
- 1 medium banana
Dry Ingredients:
- 1/2 cup almond flour
- 1 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup cacao powder
- 1 tsp cinnamon
- 2-3 cups whole grain oats
Other add-ins:
- 1 cup walnuts chopped (use your own preference)
- 1 cup berries (pictured is approximately 1/2 cup blueberries & 1/2 cup blackberries) – use your own preference or what you have on hand
Directions:
Preheat oven to 350 degrees, blend wet ingredients together (I used a blender this time), prep dry ingredients separately leaving out the whole grain oats, but include the oat flour. Add the dry ingredients to blender or bowl, then transfer mix to large bowl and add in the 2-3 cups oats- you’ll notice if the oats are helping soak up some of the liquid, but too dry isn’t great – and fold in the berries and nuts.
Using a parchment paper lined cake pan you won’t need any oil and spread evenly. The baking time might vary, but check it at 20 minutes and probably not longer than 25 minutes.
Serve warm or cold with a favorite topping of more berries and coffee/tea:)
